Almond Butter Cookies
Keto Friendly!

Just wanted to drop in and share this delicious cookie recipe that a friend of mine gave me a few years back. I want to say that she got this from a Paleo site, but I can't remember the link, so full disclosure that this is not an original recipe of mine. 

The chia seeds are optional, but as discussed on a previous post, chia seeds are loaded with magnesium, amongst other nutrients. The Ancient Aztecs and Mayans highly valued it for its ability to provide sustainable energy throughout the day, so I make sure to use it on my eggs, yogurt, smoothies, salads, etc. 

I plan to continue adding more dessert recipes to this post, so I'll be updating it again when I have more time to include them. Until then, enjoy this delicious treat. Warning though: Don't have too many. Although good fat, they are still high in fat, and, because of the chia seeds- and I'm putting this light-heartedly- they might give you the squirts, no joke! I made some for a family member, once, and had I not given her advanced warning, she probably might have assumed I was trying to poison her, ha! Needless to say, she didn't heed my warning *blush*

Gluten Free Cookies


Ingredients

1 cup of almond butter - 6/2025 update: If I'm going to make them on the day I buy the ingredients, I personally prefer getting the butter expressed from the actual almond, which our grocery chain, HEB, provides. It doesn't have as long a shelf life, but I prefer it fresh. Otherwise here are some suggested ones that I have used that are just as good and will store longer.  Here's one from Amazon that I have used that is verified organic, with minimal amount of ingredients.: Justin's almond butter (this only has 2 ingredients, almonds and palm oil, but please note that Palm oil is 100% saturated fat, so if you're counting calories, or watching your saturated intake, that is something to consider)
1/4 cup raw honey
1 egg (I personally prefer eggs that come from foraging chickens that are eating the protein found in bugs than from those feed grains, which may include U.S. wheat, which I avoid)
1 tsp vanilla
2 cups almond meal (I like to use Bob's Red Mill almond meal, but I found this one more affordable on Amazon, which I was thinking of trying. Bob's has grown in popularity, and I have noticed a significant rise in their prices.)
2 tbsp chia seeds
1/2 tsp baking soda (I use baking soda for everything, including for cleaning, so I prefer to buy it in bulk to have an ample supply. If you're cutting back on costs, a box usually runs under a $1 at our local grocery store, so it would probably be more affordable there)

Directions: 
1. Preheat oven at 350 degress
2. Mix wet ingredients: almond butter, coconut oil, honey, egg, vanilla
3. Combine dry ingredients in another bowl: almond meal, chia seeds, baking soda
4. Stir in dry ingredients with the wet ones and mix. 
5. Using 1 tbsp, scoop dough and rolls into balls. 
6. Line parchment paper on a baking sheet and flatten balls with a fork. 
7. Bake for 10 minutes.
